Kira, the cook

My daughter, Kira, doesn’t like to cook.  I keep giving her recipes I think are easy, but she just groans.  The only reason she goes into her kitchen is because it is the only way into and out of her apartment.  But she decided to try to cook a bit rather than keep spending a lot of money going out all the time.  Now she gave ME a recipe!  If she says it is easy, it has to be “easy-peasy.”  And it is.  Not only is it “easy-peasy,” it is delicious!  I can hardly wait for her next recipe!

Here is the recipe:

Put one can of black beans into a crock pot.  Add some chicken.  (She started with raw chicken breasts.  I used some leftover cooked and chopped chicken.)  Cover with a jar of salsa.

Cook on low for 8 hours or on high for 6-7.  This can be fudged a bit, esp. if you use pre-cooked chicken.  She didn’t get home for a while and hers ended up cooking for about 10 hours, but it was still great.

Serve over rice, add some shredded cheddar, a dollop of sour cream, shredded lettuce, and some tortillas or tortilla chips.  Add some guacamole!  And whatever else you like!

  1. It sounds great! Only problem – my husband won’t eat beans. Oh well…

Sadly, Steve wouldn’t eat this either, but it sounds yummy! I could make it for church pot luck or work lunch with the girls, though. Thanks Michele!

    Tell Kira hello.
